The winery established its roots in the year 1996, which is managed by the Carprelli family. Derived from the Latin name Pastinum gives an insight into the winery as the Land destined for the wine
The goal was to recover and enhance the ancient vines of the Itria Valley. Thus began the search around the oldest vineyards of those varieties whose characteristics have remained etched in their memory. Very old vines have been marked, from which they have taken the necessary grafts to obtain the precious grafting gems.
