The processing of the vineyards takes place with the utmost care and respect for the environment: anticryptogamic interventions limited to the minimum, fertilization made with organic products only for maintenance and not forcing production, short pruning and natural grassing. The grapes are harvested manually. The grapes are then gently pressed. For each type of product, the most suitable processing techniques are used. Decanting takes place in stainless steel vats that guarantee optimal hygienic conditions.
