Paolo cultivates a vast range of grapes, including Primitivo, Negroamaro, Salice Salentino, Primitivo Ros, and Negroamaro Ros. He also grows top-quality Fiano, Chardonnay, and Malvasia, along with fruity Pinot Grey, Susumaniello, Verdeca, and Minutol
The cellars occupy a total area of about 24,000 square meters. The first is located in the heart of Salice Salentino DOC (San donaci) the second, inaugurated in August 2020, is located at the gates of Primitivo di Manduria DOC (Monteparano).
