Vineyards are planted with white varieties including Malvasia di candia aromatica, Moscato bianco, Ortrugo, Trebbiano romagnolo, Sauvignon and Chardonnay. The red varieties grown here are Pinot Nero, Cabernet Sauvignon and Merlot
Azienda Agricola Pusterla houses state of art cellar with all the modern pieces of equipment that justify the quality of grapes. This modernization helped work better at every stage of wine production. The white grapes are obtained by soft pressing, followed by immediate cooling which goes into a decantation period that ferments slowly at a controlled temperature. The red grapes go into fermentation with peels for 8/10 days after careful selection. Then, it goes into lactic fermentation that results in a greater softness. The reds go to aging to the old underground cellar of the castle for 2 years in small and medium oak barrels.
