Since 2010, Raffilù have been experimenting with new flavors and cooking techniques at Vecchio Mulino Beach.
In 2017, they established the Vecchio Mulino Lab in Peschiera del Garda, designed as a playground for chefs to explore various methods such as pressure cooking, steaming, vacuum sealing, overnight marination, concentration, drying, smoking, curing meats and fish, baking breads and pastries, making chocolate, and maturing ingredients. The lab also produces fresh pasta, spreads, jams and desserts. In 2020, they expanded their venture with Raffilu in central Peschiera del Garda - boasting a scenic view of the canal and main square.
