Glicine's philosophy is to showcase the rich culinary heritage of the Italian peninsula from the Alps to the Mediterranean.

Mario's love for cooking began during his childhood, when he would make delicious snacks with his grandfather. He honed his skills through studying and researching traditional ingredients and techniques, eventually leading him to open his own restaurant in 2000. For the location, he chose a stunning building from the early 1900s that was originally a "refreshment shop" and a meeting place for locals.

After renovating it to create a classic late 19th century atmosphere with simple yet refined decor and images reflecting the area, the restaurant quickly became known for its deliciously simple dishes that felt like a homely dining experience rather than a traditional restaurant. As time went on, Mario's children Beatrice and Francesco joined the business, expanding it while still maintaining its original spirit. Today, their family-owned establishment is renowned as one of the best restaurants of its kind in Italy.
