Viviana Varese's cuisine is a reflection of her true self. It embodies her impulses and carefully balanced flavors, fueled by a deep dedication and passion for her craft.
From a young age, she was enchanted by the cooking at her family's fish restaurant, which ignited a journey of exploration and learning beyond Campania. Along the way, she found inspiration in places and people such as Albereta and Maestro Gualtiero Marchesi, El Celler De Can Roca, Christian Puglisi's Relae, Angel Leon's Aponiente, and Albert Adrià's Enigma in Barcelona. In 1999, Viviana unveiled her signature Il Girasole brand in Lodi. Eight years later, Alice Ristorante emerged in Milan. By 2011, she earned her first Michelin star and eventually relocated to Eataly Smeraldo. Today? Viviana continues to evolve, take risks, but always stays true to herself: bold, genuine, and passionate in all her endeavors.
