He skillfully combines familiar flavors with new ingredients, daring to add bold flavors while maintaining a respectful nod to classic recipes. This culinary journey began in 2000 when he opened Sedicesimo Secolo restaurant, the culmination of his training at Alberghiero di San Pellegrino Terme, Bergamo. Born in 1985, Simone Breda pursued a path in various international cuisines under the guidance of renowned chefs.
