The foundation of it all is the love for Mother Yeast, which has been alive for fifty years but is only six years old in the eyes of Giorgia, marking the same age as Nero Vaniglia. As with any master leavener, this sourdough has been named after something dear to its creator - in this case, Carlotta after the famous neighborhood fountain that has been a beloved meeting spot for over half a century.
