About

The Grande Dolcezza combines Silvano Melillo's confectionery experience, the highest quality ingredients, and the desire to create.

The cream puff dough is carefully cooked to achieve the perfect texture. If taken out of the oven too early, it may result in deflated and unappetizing little pizzas. Choux pastry, also known as cream puff pastry, is a unique type of dough that requires two rounds of cooking. It has a light and crunchy exterior that puffs up during baking, leaving a hollow interior. Once cooled, the cream puffs can be used immediately or stored in the refrigerator until ready to be served. Before serving, they can be briefly reheated in the oven to restore their crispness. This delightful sweet treat originated from a recipe brought by Ursuline nuns in the 18th century and gained popularity in the 1800s. The small pastry is made from a paste of flour, eggs, milk, sugar, butter, liqueur, and yeast. After being divided into small shapes and fried, it is dusted with icing sugar. It is believed that this dessert became famous during the Belle époque era. The shells are baked at around 200° for a short time until they expand and become light and airy inside. They are then filled with various flavored creams before being topped with icing.
