The Valpolicella, a hilly region north of Verona, is famous for its vineyards as well as its olive groves. In fact, the renowned Amarone wine is produced there, along with other popular varieties. The Veneto-Valpolicella D.O.P. requires at least 50% local Grignano and Favarol olives to be used in its production. This results in a beautiful yellow color with green undertones, fragrant floral notes and a complex flavor profile featuring hints of apple and spices. The acidity level must not exceed 0.5%, making it an ideal accompaniment to dishes such as beef carpaccio, grilled meats, or fish.
