The Veneto-Valpolicella D.O.P. requires at least 50% local Grignano and Favarol olives to be used in its production. This results in a beautiful yellow color with green undertones, fragrant floral notes and a complex flavor profile featuring hints of apple and spices. The acidity level must not exceed 0.5%, making it an ideal accompaniment to dishes such as beef carpaccio, grilled meats, or fish.
