Nestled within the historic Cantina del Rubino, a significant industrial archaeological site born in 1953, Birrificio del Monferrato is a testament to craft beer craftsmanship. We exclusively produce artisanal beer at our facility, using the high fermentation method without filtration or pasteurization, ensuring unparalleled taste and absolute authenticity. Our brewing process, conducted in modern steel autoclaves, draws from the high fermentation method. Depending on the yeast selected by our master brewer, two categories emerge: low and high fermentation. Utilizing Saccharomyces Cerevisiae yeast for high fermentation, active at warmer temperatures (15-25°C), ensures a swift process, resulting in intensely aromatic and flavorful beers. We pride ourselves on using only the finest raw materials, combining the high fermentation method to guarantee the best taste and absolute genuineness in every brew.
